Blueberry Raspberry Cream Cheese Bars

Oatmeal Crumble Ingredients: 

  • 3/4 cup very soft butter
  • 2/3 cup white sugar
  • 2/3 cup brown sugar
  • 1/2 teaspoon baking soda 
  • 1/2 teaspoon salt
  • 1 1/3 cups flour
  • 1 1/3 cups quick oats (uncooked)

Filling Ingredients:

  • 8 ounces cream cheese
  • 1 (14 ounce) can sweetened condensed milk 
  • 1 teaspoon vanilla 
  • 1 egg yolk 
  • 1 to 2 cups of blueberries and/or raspberries

Directions:

  • Preheat the oven to 350°F and line 9x13 pan with parchment paper or coat with cooking spray.
  • In a large bowl mix the butter, white sugar, and brown sugar. Then stir in the baking soda, salt, flour, and oatmeal until well combined.
  • Press about 2/3 of the mixture into the bottom of the pan and bake for 13 minutes.
  • Prepare the filling while the bottom layer is baking. Place cream cheese in a bowl and mix until smooth. Slowly stir in the sweetened condensed milk. Add the vanilla and egg yolk and mix well.
  • Once the bottom layer is done baking, remove from the oven and carefully spread the cream cheese mixture over the crust.
  • Add the berries on top of the cream cheese layer.
  • Sprinkle the remaining oatmeal crumble over the top of the berries and lightly press down.
  • Bake an additional 20 to 25 minutes or until the edges are golden brown.
  • When it comes out of the oven it will look a bit soupy.
  • Let cool completely before cutting. 
  • Store in the refrigerator.
  • Serves 24.
