Blueberry Raspberry Cream Cheese Bars
Oatmeal Crumble Ingredients:
- 3/4 cup very soft butter
- 2/3 cup white sugar
- 2/3 cup brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/3 cups flour
- 1 1/3 cups quick oats (uncooked)
Filling Ingredients:
- 8 ounces cream cheese
- 1 (14 ounce) can sweetened condensed milk
- 1 teaspoon vanilla
- 1 egg yolk
- 1 to 2 cups of blueberries and/or raspberries
Directions:
- Preheat the oven to 350°F and line 9x13 pan with parchment paper or coat with cooking spray.
- In a large bowl mix the butter, white sugar, and brown sugar. Then stir in the baking soda, salt, flour, and oatmeal until well combined.
- Press about 2/3 of the mixture into the bottom of the pan and bake for 13 minutes.
- Prepare the filling while the bottom layer is baking. Place cream cheese in a bowl and mix until smooth. Slowly stir in the sweetened condensed milk. Add the vanilla and egg yolk and mix well.
- Once the bottom layer is done baking, remove from the oven and carefully spread the cream cheese mixture over the crust.
- Add the berries on top of the cream cheese layer.
- Sprinkle the remaining oatmeal crumble over the top of the berries and lightly press down.
- Bake an additional 20 to 25 minutes or until the edges are golden brown.
- When it comes out of the oven it will look a bit soupy.
- Let cool completely before cutting.
- Store in the refrigerator.
- Serves 24.
