Loaded Baked Potato
Ingredients
- Russet potato, medium to large
- 1/2 cup cottage cheese or plain Greek yogurt
- Ready-made seasonings, such as Everything but the Bagel
Directions
- Wash potato, use fork to add holes for steam release, and loosely wrap in a paper towel.
- Microwave for 4 to 5 minutes or until potato is baked through.
- Slice in half and top with cottage cheese and seasonings.
