Power Granola

Power Granola

Ingredients:

  • 5 cups rolled oats
  • 3 cups ground nuts (walnuts, pecans, and/or almonds)
  • 3/4 cup dried shredded coconut
  • 1 teaspoon salt
  • 1/2 cup olive oil
  • 3/4 cup maple syrup 
  • 3/4 cup seeds such as pepitas, sunflower seeds, or hemp hearts (optional)
  • 3/4 cup dried cranberries (optional)

Directions:

  • Preheat oven to 350°F.
  • In a large bowl, combine the oats, nuts, coconut, and salt. 
  • Drizzle in the olive oil and stir thoroughly to coat. 
  • Drizzle in the maple syrup and stir thoroughly to coat. 
  • Spread evenly on two standard baking pans. 
  • Bake for 8 minutes, then stir the granola and rotate pans. 
  • Bake for another 8 minutes and stir again. 
  • Bake for a few more minutes if needed. Remove from oven when oats are starting to turn golden.
  • Let granola cool on pan and sprinkle seeds and/or cranberries over the top. Store in tightly sealed container.
  • Serves 14.
