Power Granola
Ingredients:
- 5 cups rolled oats
- 3 cups ground nuts (walnuts, pecans, and/or almonds)
- 3/4 cup dried shredded coconut
- 1 teaspoon salt
- 1/2 cup olive oil
- 3/4 cup maple syrup
- 3/4 cup seeds such as pepitas, sunflower seeds, or hemp hearts (optional)
- 3/4 cup dried cranberries (optional)
Directions:
- Preheat oven to 350°F.
- In a large bowl, combine the oats, nuts, coconut, and salt.
- Drizzle in the olive oil and stir thoroughly to coat.
- Drizzle in the maple syrup and stir thoroughly to coat.
- Spread evenly on two standard baking pans.
- Bake for 8 minutes, then stir the granola and rotate pans.
- Bake for another 8 minutes and stir again.
- Bake for a few more minutes if needed. Remove from oven when oats are starting to turn golden.
- Let granola cool on pan and sprinkle seeds and/or cranberries over the top. Store in tightly sealed container.
- Serves 14.
